Recipe of the Month: Massaged Kale Salad

Serves 4-6

Ingredients:

•1 bunch of kale, stems removed and leafs pulled into bite sized pieces

•1/4 cup olive oil

•1 lemon juiced

•1/2 tsp salt

•1/2 tsp pepper

•1/2 c dried cranberries

•1/2 c sunflower seed

•1/2 c goat cheese

Lacinato “dinosaur” kale

Step 1: Dressing  

Whisk together lemon juice, salt, and pepper.  Slowly whisk in olive oil until a creamy texture is achieved.  (Food processors or blenders work great)

Step 2: Salad

Add 1/2 of the dressing to the kale in a large bowl.  Gently massage kale with hands until wilted 3-5 minutes.

Step 3: Toppings

Add cranberries, sunflower seeds, and goat cheese.  

Or get creative with toppings and make it your own.

Top with more dressing as desired and serve.
